Chocolate & Guinness Cupcakes
Ingredients/Recipe
Cakes
250ml Guinness
250g Butter 400g Caster sugar
75g Cocoa
1 tbs Vanilla
142ml Sour Cream
2 Eggs
275g Plain Flour
2 and a 1/2tsp Bicarbonater of Soda
Topping
300g Philadelphia
150g Icing Sugar
125ml Double / Whipping Cream
2. Add sugar and cocoa.
3. Mix eggs, sour cream & vanilla together and add to pan.
4. Whisk in flour & bicarbonate of soda.
5. Split into muffin cases or pour into a cake tin.
6. The topping, whip cream and then add Philadelphia and Icing sugar and mix.
Baking
Muffins - 180/Gas mark 4, 20-25 mins
Cake - 180/ Gas mark 4, 45-60 mins

The mixer is a lighter than should be, but when I went to make I didn't have enough cocoa!
